  2. 1 calabacín mediano
  3. 1/4 de cebolla blanca mediana
  4. 1 trozo puerro

  8. 2 cucharadas soja texturizada
  9. 2 cucharadas tomate frito
  10. 1/4 de cucharadita de comino molido
  11. Sal
  12. Pimienta negra recién molida
  13. Aceite de Oliva Virgen Extra

  1. Poner a hidratar la soja texturizada unos 20 minutos
  2. Picar la cebolla, puerro, jengibre y los pimientos. Poner a pochar a fuego bajo con un poquito de aceite de oliva
  3. Pelar y picar la calabaza y reservar
  4. Cuando las verduras empiezan a estar blandas añadimos el tomate frito, un poco de sal, pimienta negra recién molida y el comino molido. Mezclamos y añadimos la calabaza
  5. Cubrimos con caldo de verduras y dejamos cocer hasta que la calabaza esté blanda
  6. Escurrimos la soja texturizada y la añadimos a la sartén. Mezclamos, dejamos 2-3 minutos y retiramos del fuego. Reservar
  7. Lavar, secar y cortar los extremos del calabacín. Hacer láminas finas (yo he usado la mandolina al 2) y en una cara ponemos un poquito de pimienta negra recién molida
  8. Ponemos una plancha o sartén grande sin nada de grasa a fuego muy fuerte y cuando coja temperatura ponemos unos segundos las láminas de calabacín por la cara con la pimienta, sacamos y reservamos
  9. Vamos haciendo láminas hasta tener todas
  10. Vamos poniendo 3 láminas superpuestas en una tabla con la cara hecha hacia dentro. Ponemos un poco de la mezcla de la sartén en un extremo y enrollamos con cuidado
  11. Seguimos enrollando hasta tener el canelon terminado. Lo ponemos en un plato de servir con la parte que cierra hacia abajo. Repetimos hasta tener todos los canelones en el plato
  12. Acompañamos con una salsa al gusto. Yo lo he acompañado de salsa de calabaza, levadura nutricional y semillas de lino
