Dejamos que hierva hasta que al pincharla con un tenedor, la pulpa resulte blanda, la retiramos del cazo y con ayuda de un tenedor chafamos la carne de la calabaza para que suelte el exceso de agua que pueda tener, haciendo a su vez una pasta. Dejamos enfriar.
- Ya tenemos la pulpa lista para su consumo. En un bol batimos el azúcar con los huevos hasta que la mezcla resulte crema espumosa. Añadimos la calabaza, la mantequilla, la ralladura de limón y volvemos a revolver. Seguidamente añadimos la harina, mezclada con la levadura. A vamos integrando poqito a poco y removiendo con un batidor de varillas.
- Por último la canela, ya que le da un toque muy bueno. Yo le he añadido en el acabado, azúcar espolvoreado con crocanti de almendra. Pero se puede colocar frutos secos los que más os gusten. Vertemos toda la mezcla en un molde previamente untado de mantequilla y enharinado y horneamos unos 40 minutos a 180º. Transcurrido el tiempo, dejamos enfriar y decoramos a nuestro gusto.
