- Empezamos poniendo a hervir el agua con vinagre en una olla, agregamos las hojas de laurel, 2 cucharadas de sal y 1 cuchara de comino. Una vez que hierva, agregamos las berenjenas y dejamos por unos 20 min. Hasta que el tenedor las traspase. No se pasen mucho porque sino después se rompen.
- En un bowl, preparar la mezcla de ajo con perejil y un poquito de aceite de oliva. Condimentar a gusto. Yo agregué ají molido.

- Una vez que tengamos todo listo, vamos con el frasco. Vamos llenando una capa tras capa de berenjena poniendo entre medio de cada una, una cucharada de la mezcla y les recomiendo poner las hojas de laurel también por el medio del frasco.
- Una vez que terminamos, agitamos bien el frasco para que no quede ni una burbuja de aire, y completamos el frasco con aceite de oliva. Guardamos en un lugar seco y oscuro al menos 20 días para comerlas. No nos queda otra que tener paciencia! Les digo que vale la pena!
